FRESNO, Calif. (KFSN) — From charcuterie boards to bouquets, Novella Dean creates works of art.
“People eat with their eyes first, so this is a treat for the eyes,” Dean said. “It’s very colorful, with boards featuring flavors and cultures from around the world.”
Mosaics Mouthwatering Charcuteries is a catering company serving the Fresno-Clovis area.
“We try to include substantial treats like fruits, veggies, snacks, crackers, cheese, meat and chocolate,” Dean says.
Dean sources his ingredients locally, including international cuisine.
The vibrant colors and unique designs make this piece the centerpiece of any celebration.
“It’s really a part of my heart. I want to represent Trinidad and Tobago and its vibrancy through what you see on the charcuterie board and the grazing table,” she said.
Novella emigrated to the United States in his 20s and attended college in Florida before moving with his family to the Central Valley.
“I come from a family of three generations of female entrepreneurs, so I knew I had to get back into it,” Dean said.
In addition to his thriving catering business, Dean also teaches themed charcuterie board classes at Clovis Culinary Center, the most popular being a bouquet-making class.
“When people come to our classes, they enjoy a little wine and dessert, listen to some fun music, and hear about how this started in my culture,” she said.
Dean says he prides himself on emphasizing collaboration over competition.
“No one can do anything alone,” she says. “You need community. You need family. You need grit, you need determination. You need love. You need faith.”
