Are you trying to eat low-carbs? This stuffed BLT chicken sandwich is a delicious alternative to the classic!
Eating low carbs doesn’t mean you need to miss out on good stuff! I’ve created one simple replacement for the classic BLT sandwich, but I don’t think I’ll go back! Better yet, you can get more protein without sacrificing the flavor, and it’s a great way to jazz boring chicken breasts.
This is a very unique chicken breast hack!

BLT Plush Chicken Breast
Yield: 3 servings
Preparation time: 5 minutes
Cooking time: 20 minutes
Total time: 25 minutes
Low carb BLT without bread

Cook chicken breast for 15-20 minutes or until cooked. Cook the bacon to the crispy finish you want.

Let it cool a little. Cut the chicken in half lengthwise, but it passes through the whole time. Leave the chicken slightly connected, like on both sides of the hot dog pan.

Spread the mayo over the chicken breast.

Slice the tomatoes and cut the slices in half. Layer it on top of chicken breast.

Top with bacon and finally lettuce. Close the “bread” and have fun!

Additional tips for how to make this chicken BLT:
For the best “bread”, use a nice, thick chicken breast, not thinly sliced or stripped. This makes it easiest to cut into bread. Let the chicken cool before cutting into bread. I can’t quite recommend this stuffed chicken BLT sandwich!
I was a bit skeptical at first, but I can’t believe how delicious and fresh this BLT chicken is! I must have made it very appetizing, so even my 5yo wanted to taste it. And he couldn’t stop biting! 😂
Plus, I think this recipe is perfect for picnics and perfect for busy weekday nights. You can also make some chicken breast “bread” and hide it in the fridge and add a variety of sandwich toppings each week!
