Yellow cake mix makes it easy to bake at home.

Blueberry crumb cake using cake mix
Yield: 10 servings

2/3 cup granulated sugar 2/3 cup brown sugar 2 teaspoons ground cinnamon 1 1/2 cups butter (melted and cooled) 3 1/2 cups flour

Preheat oven to 350 degrees. Grease a 9×13 pan.

Combine cake mix, water, eggs, butter, and vanilla extract in a large mixing bowl and use a hand mixer to mix until smooth.

Stir in fresh blueberries. Pour the cake batter into the mold.

Combine crumb coating ingredients in a mixing bowl.

Bake for 30-35 minutes. If you insert a toothpick into the center and it comes back clean, it’s done.

The cup of fresh blueberries was actually quite mellow, so feel free to increase the amount if you want a stronger berry flavor. If you want to add nuts, add 1 cup of chopped pecans for a great crumb topping. This can be made in advance and stored, covered, in the refrigerator for up to 3 days. I like to eat this coffee cake cold, like at a bagel shop, but you can also warm it up a bit before eating.
