Corn casserole is an old-fashioned sweet and savory dish that combines Jiffy corn muffin mix with creamed corn and whole grain corn. Together with butter and sour cream, you’ll have a dreamy casserole that you’ll want to indulge in. It’s not your average cornbread, and I love that it’s buttery, rich, and super creamy.
If you’re like me and love holiday side dishes perhaps more than the main dish, this is for you! Plus, this is a pretty economical recipe as it costs less than $10 to make with groceries.
We tend to stick with the original recipe from JiffyMix.com, except we use a regular 14-15 ounce can of corn instead of the 8 ounce corn. Usually required cans.

Preheat oven to 375 degrees. Grease a 9×9 casserole dish.

Whisk 2 eggs in a bowl. Add the remaining ingredients and stir until the batter is combined.

This idea serves 6-9 people depending on the size of your slices, but you can easily double it for a larger group using a 9×13 casserole dish. This is something I do sometimes to make sure I have leftovers. Baking time may be a few minutes longer. It’s done when the center is set and the sides are browned. Although I haven’t personally tested it, I’ve read that you can gather all of these ingredients together and make a casserole in the crockpot instead of the oven. Try cooking on high heat for 2-3 hours until cooked through. Feel free to mix and match different add-ins. Some people add cheddar cheese on top and mix in cooked bacon, chopped jalapeños, and green chili peppers. This is very versatile and easy to adapt to your tastes.
