My family isn’t the same soup fan as I am, but this comforting and hearty Italian Sausage and Vegetable Soup was so delicious. It’s easy to make using ingredients in your pantry, and you can put your slow cooker to good use. Of course, you can also make this weeknight recipe right on the stovetop if you prefer.
Having hot soup on hand when your family is ready to eat can be helpful, especially if you have a busy evening sports schedule and may eat at different times.
The result is a great dinner that everyone will love.
This soup is full of flavor because it contains Italian sausage. Tomato soup is very comforting and warms you up when it’s cold outside. Topped with creamy ricotta cheese for an extra layer of satisfying flavor and texture.

A hearty, flavorful soup with vegetables, ground sausage, and ricotta cheese.

In a frying pan on the stove, break up the ground sausage with the onions and brown. Drain and add to slow cooker.

Add chopped carrots and celery, marinara sauce, diced tomatoes with liquid, garlic powder, Italian seasoning, and broth. Mix everything together and close the lid.

Cook slowly on high for 2 to 3 hours or on low for 5 to 6 hours until vegetables are tender. Before eating, wash the “pasta” and add it along with the basil. Top with ricotta cheese and enjoy.

I love this skinny pasta as a low calorie alternative. It’s so delicious that I incorporate it into many recipes at home. Feel free to omit or add 4 ounces. If desired, add traditional pasta cooked at the end of this recipe. Do you want to use the stovetop for this soup? With this method, you can actually get the soup on the table in no time. Follow the remaining steps except brown the meat using a stock pot or Dutch oven and simmer on the stove until the carrots and celery are tender, about 20 minutes. I personally tend to eat high carb, low calorie foods. For even fewer calories, you can lighten it up with some Italian turkey sausage.
I love a good Crock-Pot soup, and this one did not disappoint.
