To celebrate the day of love, bake a mini cake in a to-go style tin and wrap it with a cute ribbon. I used my favorite way to arrange a boxed cake mix by adding butter, milk, and more eggs than recommended. The result is a flavorful cake that is easy to prepare.
If you prefer, you can use red velvet like I did here, choose another flavor, or use your favorite from-scratch cake recipe. I made a simple cream cheese frosting for a cake and it turned out to be a delicious combination.
The key element for packaging these mini Valentine cakes are these tins.
I found a pink mini loaf pan on Amazon that would be perfect for making mini cake gifts. Comes with a small pan, transparent lid and spork for baking. Add fun sprinkles and a cake topper to create a festive Valentine’s Day cake.
I think this container would be great for other foods as well. You can pack up all kinds of treats to take home, including quick breads, banana pudding, and even delicious treats like mini meatloaf and lasagna.

Previously, I made fun Christmas tree toppers during the holidays using candy melts and parchment paper. Well, here are some fun variations for Valentine’s Day. I melted red candy wafers in the microwave, put them in a piping bag, and wrote the word love on a parchment paper.
Once dry, you can use it as a cake or cupcake topper. Please believe me. I’ve had a few mistakes with my handwriting practice, but I’ve realized that it doesn’t have to look perfect.

8 ounces cream cheese, softened 1/2 cup butter, softened 2 teaspoons vanilla extract 4 cups sugar

For the cupcakes: Preheat oven to 350 degrees.

In a large mixing bowl, add cake mix, eggs, melted butter, and milk. Using a hand mixer, mix on medium speed for 1-2 minutes.

Pour the batter into 13 cake pans. Place on a baking sheet and bake in the oven for 18-20 minutes. If a toothpick inserted in the center comes out clean, it’s done baking. Let the cake cool.

For the topper: Melt the candy in the microwave according to package directions. Add the mixture to a piping bag with a fine tip, or use a disposable plastic bag and snip the tip. Place parchment paper on a baking sheet and write the word “love” in cursive on the paper. Repeat this process and leave until cool and solidified.

For the frosting: Cream together softened cream cheese, butter, and vanilla in a mixing bowl. Slowly add the powdered sugar.

Once the cake has cooled, spread the frosting over the top of the cake. Add sprinkles and a “love” topper to the cake. Cover each with a lid and tie the spokes to the top using twine or ribbon.

Additional tips for making Valentine’s Day cakes:
Baking times may vary slightly. It took a little longer than baking cupcakes. If you insert a toothpick into the center and a clean part comes out, it’s done. If you want to bake a full cake, follow the baking time listed on the back of the mix box. You can create a more dimensional effect by making cupcakes instead and placing love toppers on them. I tested making the topper both using a pastry tip and simply clipping the end of a plastic piping bag. Both methods worked. I think it’s okay to clip the ends of the storage bag. I used a cake scraper tool to draw lines on the cake when applying the frosting.
