Yield: 16 servings
Preparation time: 2 hours 30 minutes
Total time: 2 hours 30 minutes
These soft cake pops have the same candy coating and sprinkles on the outside as Starbucks.
1
Add cookies and cream cheese to a large mixing bowl or stand mixer. Mix until the cookies form small crumbs.
2
Using a cookie scoop or spoon, scoop and roll into small balls, about 1 inch. Place on a cookie sheet lined with parchment paper.
3
Melt 1/4 cup candy melts (according to package directions). I tried melting it in a microwave for a short time.
4
Dip sticks into candy melts and insert into each cake pop ball. Freeze for several hours on a tray lined with parchment paper.
5
Remove from the freezer and melt any remaining candy melts. Place in a tall cup or jar.
6
Dip cake pops into melted candy coating. I find it easier to soak it straight down and up. Tap off excess and add sprinkles. Place the cake pop back on the cookie sheet, place it in a jar, or insert it into a piece of Styrofoam to hold it upright until it hardens. enjoy!

Tips for making sugar cookie cake pops:
This style of cookie is very soft, so you can mash it by hand, use a potato masher, or use a stand mixer. It was so quick and satisfying to use the mixer! A small cookie scoop makes rolling the cookie crumb balls quick and easy. Make sure to place it on a cookie sheet lined with parchment paper to prevent it from sticking. Don’t skip the freezing part. My previous failure with homemade cake pops was when the cake pops fell off the sticks when I dipped them. I found out that the trick is to freeze it with the stick attached! Dipping straight down into the melted candy coating and then up is also effective. These two tips worked for me.
Who knew these cookie pops would be such a fun cake pop hack?
These were really delicious and reminded me of frosted circus cookies. I love how this turned out. This idea makes a lot of sense since the cookies are already very soft, almost cake-like. 😋 Hooray for easy no-bake snack ideas that are fun to make!
