I personally have always enjoyed this dish for holidays and special occasion brunches like Easter Sunday. The ingredients are simple and quick and easy to compile before putting it in the oven.
Why are they called funeral potatoes?
Funeral potatoes are often associated with funerals and potluck-style gatherings as a traditional comfort food. It’s an easy and affordable dish to serve to a large group at receptions and celebrations. According to Dictionary.com, “The name comes from the Mormon custom of serving the dish at receptions after funerals, especially those organized by women’s organizations called Relief Societies.”

2 cups cornflake cereal 1/4 cup melted butter

Preheat oven to 350 degrees.

In the largest mixing bowl, combine thawed hash browns with soup, sour cream, onion, melted butter, shredded sharp cheddar cheese, garlic powder, salt, and pepper.

Spread mixture into a 9×13 casserole dish. Sprinkle Parmesan cheese on top.

In a bowl, use a spoon to crush cornflakes, add melted butter and mix. Spread the mixture over the casserole.

Bake in a 350 degree oven until golden brown and bubbly, about 45 to 50 minutes. Serve hot.

Tips for making funeral potatoes with cheese:
If cornflake toppings aren’t appealing, you can use crushed potato chips, crushed crackers, breadcrumbs, or crispy fried onions. If desired, substitute cream of mushroom soup for cream of chicken soup. Homemade cream chicken soup is easy to make yourself according to your preferences. Crockpot Funeral Potatoes Directions: Add all ingredients to slow cooker and cook on high for 3 hours. For the topping, perform this step after the 3 hour cook time and cook with the lid closed for another 15 minutes. Leftovers can be stored, covered, in the refrigerator for several days or in the freezer for up to 3 months.
