If you need another reason to bake sourdough bread, check out these crunchy Parmesan cheese sourdough crackers! These are some of the best crackers I’ve ever tasted, they can be made very quickly and easily using olive oil, and sourdough starters can be kept in the fridge!
The dough is not kneaded or unfolded. This is the easiest way to make sourdough crackers and they turned out to be an incredible snack!
What do sourdough discard?
Bake sourdough bread regularly and may maintain a fermented sourdough starter for use in bread instead of yeast. Feeding the starter freshwater and flour usually involves discarding some of them first. Instead of throwing this waste away, store it in a fridge container.
Sourdough starter disposal is maintained in the fridge for up to a month, and disposal seems to add more complex flavors and texture to the baked goods I love!

Mix the sourdough starter with olive oil in a small bowl. Pour into a sheet pan and spread it out very thin and rectangularly.

Add the Parmesan cheese to the top. Sprinkle all the bagel seasonings on top.

Bake in the oven for 10 minutes. Remove the crackers and use a pizza cutter to cut them into squares. Bake the crackers again in the oven for 20-25 minutes. They become more crisp as they cool too. Enjoy as is or spread or dip.

Think of these crackers as blank canvas that can be enjoyed with shredded cheese and seasonings. What kind of seeds and herbs would be amazing! Next time you can try making rosemary crackers with salted flakes and freshly chopped rosemary. Spread the crackers very thinly. Otherwise they will have a greater chewiness than crispy! Instead of olive oil, you can use melted butter if necessary. Store leftovers in a lidded container for up to 5-7 days.
