October 23, 2024 – Domaine Carneros, producer of ultra-premium Carneros sparkling wines and limited production Pinot Noir, announces the opening of one of Wine Country’s hippest new venues, Salon des Rêves. A speakeasy-style restaurant where locals and visitors can experience the winery’s wide range of appetizers, including local charcuterie, smoked salmon, vegan cheese and macaroons, as well as decadent dishes such as oysters, caviar, ceviche and canned fish. The Plat des Perles is the highlight and includes a welcome amuse bouche of bubbles and gougères, followed by a tasting of three Méthode Traditional sparkling wines along with six oysters. Advance reservations are required. Details are available on the website and special pricing is available for Chateau Association members. Other menu items include ceviche and blue corn chips, Blue Cove Branzino canned fish, and world-class caviar imported by Ecocert partner Tsar Nikolai. As a unique luxury upgrade to Tsar Nicholas’ popular domestic caviar, Domaine Carneros has teamed up with the Tsar to highlight two imported caviars, Baelii and Osetra, exclusively in the lounge.
Salon des Rêves is a luxurious and moody lounge located below the main lobby of the castle. Descending a hidden staircase, visitors are greeted by a charming Art Deco space covered in green and gold. Designed to reflect the inside of a champagne bottle, the green tones are reminiscent of the champagne bottle glasses and the gold accents are reminiscent of the sparkling wine inside. Plush custom carpeting creates a tranquil oasis with cozy plush velvet banquettes and chairs, complemented by gold and crystal-embellished walls surrounding a curved bar topped with custom marble. The roof of the Pinot Noir winery adjacent to the chateau was home to the largest solar power system of any winery in the world at the time of its installation, and continues to be expanded with a state-of-the-art microgrid installed in 2023. . The recent award is one of many from federal, state and local governments. Domaine Carneros was awarded the California Green Medal for its demonstration of “smart business through efficiency, cost reduction, and innovation through sustainable practices.”
