Heat a Dutch oven or soup pot over medium heat. Add olive oil and stir-fry the onions, celery and carrots, and the onions become more aromatic and translucent.

Reduce heat and add chicken, cream chicken soup, packets of seasonings, cream cheese, soup and milk. Beat the whole mixture together until smooth.

Return the temperature to medium and simmer the soup for about 20 minutes until the carrots are soft.

Add the spaghetti noodles and shredded cheese and simmer until the noodles are cooked and the soup is thick for about 15 minutes. (Note: I was worried that the soup would not be thick, but I soaked the noodles and it would thicken.)
