These are a staple in my pantry because they are so great as a side to burgers and steaks, and I also use them to make nachos, tacos, and now chili. The sauce is unique and very delicious.
My mom cooks these beans with cilantro and ham hock on the stove or in the slow cooker for every family gathering, making a wonderful and easy-to-make bean. 🤤
This chili was inspired by the Gaines Family Chili recipe from the Magnolia Table cookbook, which I first made several years ago. Since then, I’ve tweaked it, adding things like bell peppers, just one can of Rotel, Worcestershire sauce, and extra seasonings here and there.
Tips for making chili with ranch-style beans:
Make this recipe in the slow cooker. Cook the meat and vegetables in the skillet first, then transfer to the slow cooker before adding the rest of the ingredients. Simmer on low heat for several hours until everything is cooked and delicious. This recipe doesn’t need extra stock, so I didn’t add it. The ingredients boil down to a flavorful soup on its own, which is more like a thick, hearty chili pepper. If you want soupy chili, add a cup or two of beef broth as needed.

Preparation time: 15 minutes

Heat the olive oil in a large pot or Dutch oven over medium heat and sauté the chopped onion, bell pepper, and garlic until translucent and soft. Season with salt and pepper.

Add the ground beef, break it up, and stir-fry. Add a pinch of salt and pepper to the meat. If there is excess grease, drain it.

Stir in ranch-style beans, Rotel, tomatoes, Worcestershire sauce, chili powder, oregano, and fresh cilantro.

Bring the chili peppers to a boil, reduce heat and cook for about 30 minutes. Season with salt and pepper.

Serve in bowls and top with cheese, Fritos, and sour cream, if desired. enjoy!
